Split Grilled Lobsters with Herb Butter

This is some serious eatin’ for you lobster lovers! If you’re an outdoor grill-master, and can’t resist the intoxicating taste of grilled seafood, fire up that grill and get ready to make some serious smoke!

Grilling lobster is one of the best and most delicious ways to cook lobster! It creates the most wonderfully tender and sweet taste of the meat. The addition of the herbed butter basted over the lobster meat brings out the rich goodness of the lobster’s natural flavor. It’s something that’s irresistible for lovers of seafood, and actually quite easy to do.

Lobster on the grill can be as easy as merely cutting the lobster down the middle, and cooking it over the direct high heat of the grilling coals. This is an easy and delicious way to make Lobster at home.

INGREDIENTS:

  • 1 pound unsalted butter
  • ½ teaspoon chopped fresh tarragon
  • ½ teaspoon chopped fresh Italian parsley
  • ½ teaspoon chopped fresh chives
  • Kosher salt to taste
  • 4 (1 ½-pound) live lobsters
  • 1 tablespoon olive oil
  • Freshly ground black pepper to taste
  • 2 large lemons, cut into wedges

How To Make It:

Step 1
Melt butter over medium-low heat; skim solids off top, and discard. Pour remaining butter into a bowl, leaving any solids in pan; discard solids. Stir in tarragon, parsley, and chives; season with kosher salt. Set aside.

Step 2
Carefully position a knife on top of each lobster’s head between the eyes, and draw it sharply through the head to kill it instantly. Place lobsters, belly up, on a cutting board, and cut each lobster in half. (Lobsters may also be parboiled and then split before grilling.)

Step 3
Preheat grill to medium-high heat (350º to 400º). Drizzle lobster halves with olive oil, and season with kosher salt and pepper. Grill lobster halves, shell sides down, basting with ¼ cup herb butter several times, 7 minutes or until meat is opaque. Serve lobsters with lemon wedges and remaining herb butter.

This dish is delicious! Served fresh off the grill with such a fresh taste to it. The best part about this recipe is that it’s very easy to make and can be altered to add more spices and flavors to the lobsters for your own personal flair.
