Shrimp and Cheddar Grits with Bacon

Ingredients:

  • 4 cups water
  • 1 salt, to taste
  • 1 black pepper, to taste
  • 1 cup stone ground grits
  • 3 tbsp. butter
  • 6 slices of bacon, chopped
  • 1 lb. shrimp, peeled and deveined
  • 4 tsp. lemon juice
  • 2 tbsp. parsley, chopped
  • 1 cup green onion, thinly sliced
  • 1 clove garlic, minced
  • Directions:

    1. Bring water to a boil. Season with salt and black pepper. Add grits and cook until the water is absorbed, about 20 to 25 minutes. Remove from heat and stir in butter and cheddar cheese.

    2. Fry bacon in a large skillet until browned. Transfer to a paper towel lined plate to drain. Add shrimp to the bacon grease and cook until they turn pink. Add lemon juice, parsley, green onion, and garlic, and then sauté for 3 minutes.

    3. Spoon grits into a serving bowl. Top with shrimp, sprinkle with bacon, and serve immediately.
