Lobster Martinis

Lobster Martini Lobster Martini

These martinis are unlike any you may have had before, because they are edible rather than drinkable! They make a beautiful appetizer, and are delicious as well as healthy. Even better - they won’t give you a headache in the morning.

Serves 8

Ingredients:

  • 1-1/2 cups cooked lobster meat, cut into chunks
  • 2 cans Mandarin oranges
  • 1/2 medium red bell pepper, diced
  • 1 jalapeno pepper, minced
  • 1/3 cup red onion, minced
  • 1/4 cup fresh parsley, chopped
  • 1 Tbsp. grated lime peel
  • 2 Tbsp. canola oil
  • 2 Tbsp. fresh lime juice
  • 1/4 cup orange juice
  • 1/4 tsp. salt
  • 1/2 tsp. fresh ground black pepper
  • Citron or Lemon Vodka (optional)
  • Endive for garnish

Directions:
Drain oranges and mix with peppers, onion, parsley, lime peel, oil, juices, salt and pepper. Add lobster meat and carefully combine all ingredients. Chill for 30 minutes. Place 2-3 endive leaves into 8 martini glasses. Spoon chilled lobster mixture into each glass, dividing equally. Add a splash of Citron Vodka if desired, for an authentic “martini” taste. Makes 8 martinis. Cheers!
