Clarified Butter

Although we now include Clarified Butter for FREE in every lobster package and many seafood packages, we bring you the steps to clarifying your own butter. Some believe it yields a more pure and flavorful butter taste. Others just like the presentation. Whatever your preference, enjoy!

Clarifying the butter means you are separating anything that isn't butter. The foam that will be removed is the water and the solids on the bottom are milk fat. So the end result is pure unadulterated clarified butter! Place desired amount of unsalted butter into a small saucepan.

Melt butter slowly over low heat. When butter is melted, bring to a boil, careful not to scorch the butter. Boil butter until a frothy head develops. Remove from heat and with a spoon skim off the foam. When all foam is skimmed, carefully pour your newly clarified butter into another dish, without pouring any solids that settled to the bottom.
